I was craving mac and cheese after seeing the Eric Kim’s version everywhere this week. This isn’t that 😅 but a creamy pasta thing using what I had: squash, ricotta, peppers and parm blended with some pasta water. Seasoned with tomato powder, black pepper, and chile flake.
